Ingredients:

• 1/2 cup button mushrooms, sliced

• 1/2 cup shiitake mushrooms, sliced

• 1/2 cup firm tofu, cubed

• 1 egg, beaten

• 1 chicken broth cube

• 1/2 teaspoon sesame oil (optional)

• 1 teaspoon cornstarch

• 1/4 cup water

• 1 green onion, finely chopped (optional)

Instructions:

1. Prepare Mushrooms: Slice the button mushrooms and shiitake mushrooms. Gently dry them with a paper towel to remove excess moisture. Cube the tofu and beat the egg in a small bowl.

2. Stir-Fry Mushrooms and Tofu: In a medium saucepan, add a bit of coconut oil and stir-fry the mushrooms until they are tender. Add the tofu and cook for another 2 minutes.

3. Add Broth Cube: Dissolve the chicken broth cube in 2 cups of boiling water and add to the saucepan.

4. Thicken Soup: Mix the cornstarch with 1/4 cup of water until smooth. Add this mixture to the saucepan and stir gently until the soup thickens.

5. Add Egg: Slowly pour the beaten egg into the soup, stirring gently to create egg ribbons.

6. Season: Add the sesame oil (if using) and stir to combine.

7. Serve: Remove from heat, sprinkle with chopped green onion if desired, and allow to cool slightly before serving to your toddler.
