How to Make Yummy and Healthy Toddler-Friendly Vegetable Frittata

Ingredients:

– 6 large eggs

– 1/4 cup milk

– 1/2 cup grated cheese (cheddar or your toddler’s favorite)

– 1/2 cup chopped spinach

– 1/2 cup diced bell peppers (red, yellow, or orange)

– 1/4 cup chopped tomatoes (optional, remove seeds to avoid extra moisture)

– 1/4 cup finely chopped onion

– 1 small zucchini, grated

– 1 tablespoon olive oil

– Salt and pepper to taste (optional)

Instructions:

1. Preheat Oven: Preheat your oven to 350°F (175°C).

2. Prepare Veggies: Heat the olive oil in a skillet over medium heat. Add the onion and bell peppers, and sauté until softened, about 3-4 minutes. Add the zucchini and spinach, cooking for another 2 minutes until the spinach is wilted. Remove from heat.

3. Mix Eggs: In a large bowl, whisk together the eggs, milk, and a pinch of salt and pepper (if using). Stir in the grated cheese.

4. Combine: Add the cooked vegetables and chopped tomatoes (if using) to the egg mixture and stir until well combined.

5. Bake: Pour the mixture into a greased baking dish or oven-safe skillet. Bake in the preheated oven for 20-25 minutes, or until the frittata is set and lightly golden on top.

6. Cool and Serve: Allow the frittata to cool for a few minutes before cutting it into toddler-sized pieces. Serve warm.

P. S. Tips:

– Feel free to swap in any vegetables your toddler prefers or add some cooked, diced chicken or ham for extra protein.

– You can also bake the frittata in muffin tins for easy, individual portions.
