Toddler-Friendly Noodles with Carrot, Cabbage, and Egg Medley

Recipe for the toddler-friendly noodles with Carrot, Cabbage, and Egg Medley:

Ingredients:

  • 1 cup egg noodles (whole wheat or regular)
  • 1 carrot, peeled and thinly sliced
  • 1 cup cabbage, finely shredded
  • 1 egg, stirred
  • 1 tablespoon olive oil or unsalted butter
  • 1/4 teaspoon garlic powder (optional)
  • Pinch of salt (optional)

Instructions:

  1. Cook the egg noodles according to the package instructions. Drain and set aside.
  2. In a medium-sized pot, bring water to a boil and add the egg noodles. Cook according to package instructions until tender.
  3. Drain the cooked noodles and set aside.
  4. In a medium-sized skillet, heat the olive oil or butter over medium heat.
  5. Add the sliced carrots to the skillet and sauté for 3-4 minutes until slightly softened.
  6. Add the shredded cabbage to the skillet and continue to sauté for another 2-3 minutes until the cabbage is tender.
  7. Add the stirred eggs and continue to sauté for another 3-4 minutes
  8. If using, sprinkle the garlic powder and salt over the vegetables and stir to combine.
  9. Add the cooked egg noodles to the skillet with the vegetables and toss everything together until well combined.
  10. Cook for an additional 1-2 minutes until the noodles are heated through.
  11. Remove from heat and let cool slightly before serving to your toddler.
